Urrego grew up on his family’s farm and learned the art of coffee production from his father. 20 years ago he decided to move closer to town and sold the family farm in the process, but his love for growing coffee remained strong. 7 years ago, Urrego purchased a 2-hectare plot of land, which he named La Ilusi\u003cmeta charset=\"utf-8\"\u003eón, and began cultivating Chiroso and Caturra varietals. This coffee has a creamy caramel-like body, silky mouthfeel, and a bright honeycrisp-like malic acidity. This coffee comes from the Goro Site washing station in Uraga, Guji. This washing station was first built in 2013, and was taken over by Habtamu Fekadu Aga in 2020, who has since implemented many quality control innovations including a new pulping machine to create more homogenous lots. The site currently has 7 permanent workers and over 100 seasonal workers. Goro Site supports the surrounding community through aiding in nearby elementary school renovations and offering interest-free payments to farmers for their crop prior to the harvest.\u003c\/span\u003e\u003cb\u003e\u003c\/b\u003e\u003c\/p\u003e\n\u003cp dir=\"ltr\"\u003e\u003cspan\u003eAfter harvesting, cherries are machine-sorted and pulped, leaving about 10% of mucilage on the bean to ferment for 24 hours. Then, the beans are hand washed and laid out to dry for 9-12 days under protection from direct sunlight until ideal moisture content is reached. We purchased coffee from Habtamu’s Danche Site in Yirgacheffe last year, and this lot is another beautiful example of the excellent coffees their teams produce. Finca El Morito’s commitment to excellence has been recognized by Cup of Excellence Guatemala. They placed second this year, and first in 2022 with another washed geisha. \u003c\/span\u003e\u003cspan\u003eThis gesha underwent an extended fermentation period of 120 hours in mucilage before the coffee was washed. Such a long fermentation period requires meticulous precision to keep conditions within check. The extended fermentation manifests beautifully in the cup. We taste a playful, bright profile - slightly winey, yet balanced and clean, with a creamy, silky mouthfeel. This coffee, which we purchased along with one of their Pacamaras, is our first purchase from Finca El Morito. Rojas received his organic BIO certificate through ASEPOP Planadas,a 275-member coop in which provides its members with processing and QC resources, educational training, and various opportunities to travel to trade shows around the country.\u003c\/span\u003e\u003c\/p\u003e\n\u003cb\u003e\u003cbr\u003e\u003c\/b\u003e\n\u003cp dir=\"ltr\"\u003e\u003cspan\u003eThis coffee was immediately de-pulped after floating for impurities, and went through a 48-hour dry fermentation phase before washing off mucilage. After washing, Jorge managed a unique 3-step drying process to control cup quality and volatile aromatics. The first five days of drying involved covering the roof of the marquesina (drying house) with poly-sombra, a net-like black cover which slowed down the drying speed. At days 5, 9, and 13 of the process, the lot was gathered into bags for 24 hours to further slow down and homogenize the drying, and then laid back out in the marquesina to continue drying. This painstaking 15-day drying process preserves more aromatics and fruit-forward notes in the coffee without encouraging too many funky flavors, and the efforts do not go unnoticed. The cup bursts with the tart juiciness of wild blueberries. It is sweet like the caramelized sugars of a peach compote.
